Shrimp Ceviche



Shrimp
Ceviche


Prep Time: 5 hours, 20 minutes

Active Work Time: 20 minutes

Yield: Makes about 2 cups

Recipe

1/2 cup fresh lime juice (from about 3 limes)

2 tablespoons fresh orange juice

3/4-pound fresh shrimp, peeled, deveined, and finely chopped

1/3 cup finely chopped tomatillo (about 1 large tomatillo)

1/3 cup finely chopped tomato, seeds removed (about 1 medium-sized tomato)

1/4 cup finely chopped red onion

1 tablespoon super finely chopped Serrano pepper, seeds removed

2 tablespoons finely chopped cilantro

Sea salt and freshly ground black pepper

Olive oil

Mix the lime and orange juice in a medium-sized glass bowl. Add the shrimp, cover with plastic wrap, and let it marinate for about 4 hours in the refrigerator.

Remove the marinating shrimp from the refrigerator and gently mix in the tomatillo, tomato, onion, pepper and cilantro, cover and return to the refrigerator to marinate for about 1 more hour, or until the shrimp appears to be "cooked." It should be completely opaque and slightly pink.
Drizzle with a bit of olive oil and season generously to taste with salt and pepper.

Notes:
You can adjust the amount Serrano pepper you add, depending on how much heat you like. The amount listed in the recipe makes the ceviche medium hot.

Are you wondering how the shrimp in the ceviche is "cooked?" Wonder no more! The acid from the citrus actually changes the structure of the proteins in the seafood, essentially "cooking" it without using heat.

Went to see one of  Katie's "Hollywood Take over" shows over the weekend. She taped her shows in Jimmy Kimmel's studio and almost every seat is a good one. We went on Saturday morning and the guests were Will.i.am and Zooey Deschanel.

German Pancakes and Buttermilk Syrup

German Pancakes and Buttermilk "crack" syrup
In between attending shows, I sometimes make food. 

German Pancakes
6 eggs
1 cup milk
1 cup all-purpose flour
1/2 teaspoon salt
2 tablespoons butter

Buttermilk (or as I call it, "Crack") Syrup
1-1/2 cups sugar
3/4 cup buttermilk
1/2 cup butter
2 tablespoons corn syrup
1 teaspoon baking soda
2 teaspoons vanilla extract
confectioner's sugar

Place the eggs, milk, flour and salt in a blender; cover and process until smooth. Pour the butter into an ungreased 13 in x 9 in x 2 in baking dish; add the batter. Bake, uncovered, at 400 degrees for 20 minutes. Meanwhile, in a sauce pan, combine the first 5 ingredients; bring to a boil. Boil for 7 minutes. Remove from heat; stir in vanilla. Dust pancake with confectioner's sugar; serve immediately with syrup. Yield: 8 servings (about 2 cups of syrup)

*My BFF makes this all the time and gave me the recipe. And I didn't even screw it up either :-)

Talk Show HO in the hospital


NOTHING....I mean NOTHING can keep me away from going to see ellen today! All is good. They released me last night from the hospital. I honestly think that I got too excited about seeing her. lol

Oh Ricki your so fine...


Finally got to see Ricki Lake after all these years! I remember watching her show in the early 90's when my kids were little. I always thought that it would be so much fun to be there in the audience. Fast forward almost 20 years and here I am! Must be making up for lost time! Haha.

Ricki Lake Show is now one of my top 5 shows to go to. Everyone was so nice and they made the audience feel welcomed. The set is small and intimate (looked to be about 150 seats if that), and I loved how Ricki interacted with the audience on AND off camera. She is so sweet and adorable and she seems so down to earth. I think we should be friends!!! (even though I got busted for having an "ellen" cell phone cover on my phone...hehe)
